Lemon courgette ribbons with walnuts and feta

Rocket and lemon are both bitter foods which help stimulate your digestive juices. While the creamy feta and salty olives in this dish balance the flavours and provide texture.

  • 1 courgette
  • 60g (21⁄4oz) rocket
  • 30g (10oz) walnuts, broken into pieces
  • 30g pitted black olives
  • 40g (11⁄2oz) Feta cheese


  • 1–2 tablespoons extra virgin olive oil
  • Juice of half a lemon
  • sea salt flakes and pepper

How to make it

With a peeler peel long strips of courgette until you can not get any more flesh from it. Place in a bowl and add the dressing ingredients and mix well. Leave to marinate for 10 minutes.

Meanwhile slice the feta, olives and walnuts. Mix these into the courgette ribbons and add the rocket at the last minute before serving.

To increase the calories of this dish, add cooked quinoa or brown basmati rice or serve with grilled chicken or salmon.
